Maple-Glazed Yams with Pecan Topping

3 lbs of ignames (red skin sweet potatoes), pelées cut off on a 1/4 cup rounds1/2 teaspoon maple syrupSalt1 Orange Zest (to be) 6 Tbsp réfrigérées Bay, cuts in 1/2 inch pieces1/3 cup sugar, packed1, 1/2 cup of Queensland
